Calcium fortification of milk
Selecting an appropriate calcium for fortification of milk can be a challenge. Depending on the source, the addition of calcium has the potential to influence the colour, texture, stability, flavour, and processing characteristics of the milk. Organic sources are soluble, however the calcium ion (Ca2+) interacts strongly with some milk components, such as protein, causing coagulation. Inorganic calciums have a high calcium content, but low solubility leading to a gritty taste and settling during storage. To overcome these challenges, our AAS® stabilisation process was applied to tricalcium phosphate. Stabilised tricalcium phosphate prevents interactions between the calcium ion and the other food components, yielding a calcium source suitable for the fortification of milk and other dairy foods.
